Garlic Dill New Potatoes Recipe: Gluten-Free and Paleo

Last night my husband and I made the most AMAZING side dish with dinner.  We had gone to the store earlier in the day and found steak on sale, so of course what goes with steak?  Potatoes?  But, the more I thought about it the more I realized I wanted to try making something different than just the normal baked potato or mashed potatoes.  I remembered we had fresh dill at home that we bought at the Farmers’ Market the other day.  I also had this really awesome GarlicMachine Garlic Press from Chef’n that I was dying to try.  So, while I thought about what type of potatoes we should try making, it came to me!  Garlic Dill New Potatoes!

I’ve always LOVED Garlic Dill New Potatoes.  I was disappointed recently when I went to Boston Market and saw they are no longer offering that as a side dish.  But, why couldn’t we make our own?  It would be a great side dish to go with the steak.  So, I went on Pinterest and looked up a recipe, and then made my little adjustments to the recipe, and tah-dah!  A healthy recipe for Garlic Dill New Potatoes that is gluten-free and Paleo.

The only two ingredients that we were missing to make this dish a reality were red new potatoes and garlic.  Unfortunately, yesterday wasn’t a Farmers’ Market day or else I could have bought everything completely fresh.  But, when all else fails there’s always the regular food store.

It turns out, making Garlic Dill New Potatoes is extremely easy.  So, what changes did I make?  Instead of regular butter, I used our homemade raw grass-fed butter.  Instead of garlic paste I used fresh garlic cloves.  And I used fresh dill straight from the Farmers’ Market.

This side dish only calls for four ingredients.  I can’t wait to try it with super fresh ingredients since I’m all about living off the land.

Using the GarlicMachine Garlic Press by Chef’n was so much fun!  It was so easy to use!  All you had to do was peel a few cloves of garlic, place it in the chamber of the garlic press, open the cap at the bottom, and turn the handle to easily and gently press and mince the garlic cloves.  It made mincing fresh garlic so easy!  And cleanup was a breeze!  No cutting mat required.  No knives.  I was able to mince the garlic directly over the pot of butter.  I absolutely love this little kitchen tool and can’t wait to use it for future recipes.  I LOVE when simple kitchen gadgets can make a job so much easier.
